In a #medium pot{}, combine 4 cups water and @veggie stock concentrate{1%unit}. Bring to a boil, then reduce to a low simmer.

Heat a drizzle of @olive oil{2%tbsp} in a #large pan{} over medium-high heat. Add @button mushrooms{8%oz}; cook, stirring occasionally, until browned and slightly crispy ~{6%minutes}. Season with @salt{} and @pepper{}. Transfer mushrooms to a plate and set aside.

Heat a drizzle of olive oil in the same pan over medium heat. Add @onion{1%medium}; cook, stirring, until slightly softened and lightly browned ~{3%minutes}. Add @arborio rice{2%cups} and @garlic{2%clove}; stir until rice is coated and fragrant.

Add ½ cup of the hot stock to the pan with the rice mixture; stir until liquid has mostly absorbed. Repeat with remaining stock, adding ½ cup at a time and stirring until absorbed, until rice is al dente and risotto is creamy ~{25%minutes}. Season generously with salt and pepper.

Once risotto is done, stir in mushrooms, @grape tomatoes{½%lb}, @garlic herb butter{3%tbsp}, half the @parmesan cheese{½%cup}, and half the @chives{1%bunch}. Cook until tomatoes are softened ~{3%minutes}. If risotto is too thick, stir in a splash of water or stock.

Season @icelandic cod{2%fillets} with salt and pepper. Cook in a separate pan over medium heat until flaky ~{6%minutes}. Divide risotto between bowls. Top with cod, remaining chives, and remaining parmesan. Sprinkle with a pinch of @chili flakes{½%tsp} to taste. Serve.
